Mexican Fried Rice

This my own concoction that I made by experimenting, but I swear my kids love it (age 17 months to 12 years old).

First I make the rice:

Ingredients
1 cup uncooked long grain rice
2 tablespoons minced garlic
2 cans chicken broth
½ onion
¼ cup tomato sauce
Canned, peeled tomatoes
1 teaspoon cumin powder
1 tablespoon olive oil

Preparation:
Put the oil into a medium saucepan and heat to a medium temperature. Add the rice and brown it in the oil while stirring. Add the garlic when the rice is nearly browned. Add onion and stir til soft. Add the chicken broth, then the rest of the ingredients. Mix well. Cover, with a small air escape, and turn the heat down to medium low. Cook the rice for 20 to 30 minutes but check after 20 to see if it is ready. You do not need to stir the rice or lift the lid while it cooks. It is ready when the rice is fluffy, all the liquid is gone, and the grains are split open. If it is still wet rather than dry, cook a few minutes more.

Then I make ground beef taco mix according to package directions. When the meat is done, I add the rice. In a separate bowl I mix diced onions, tomatoes, and cilantro, then toss that into the beef/rice mixture. Voila! Beef fried rice. Simple and kid-friendly.
