Yesterday I had the honor of photographing my friend Rachel’s 13 day old great-niece Gracyn. Gracyn was blessed into the loving arms of her mommy Catherine and daddy Matt through adoption. Just in time for Christmas!

rachel - ingrid, i can’t thank you enough for photographing my niece and her family. this means so much to me and i know it means the world to them. having you capture these first moments as a family is such a gift. the images are even more beautiful than i imagined them to be. the black and white triptych took my breath away.

Falling in love with… a Crock-Pot

Anyone that knows me and family knows that my husband does most of the cooking around our house. It’s not that I don’t know how to cook… it’s just that he cooks really well and loves doing it. Lately I’ve taken an interest in utilizing our Crock-Pot. I’ve tried three recipes that I absolutely love and am astounded that it’s taken me all these years to discover the joys of Crock-Pot cooking. It’s so ridiculously easy. So I will share my first three tries and passes:

Thai Chicken Coconut Curry

Ingredients:

4 boneless skinless chicken breasts
Olive oil or vegetable oil
4 potatoes, chopped
1 jalapeño, diced
1 onion, chopped
2 teaspoons curry powder
1 clove garlic, minced
1 can chicken broth
1 can coconut milk (not sweetened)
1 bag frozen peas (10 ounces defrosted)
Salt and pepper to taste

Directions:
Coat bottom of a skillet with oil and place on stovetop set to medium heat. Add chopped onion, garlic, and jalapeño, and sauté until soft.
Move onions, garlic, and jalapeno to one side of pan and brown chicken breasts on other side. Pan must be hot and chicken breasts dry to brown.
Place stoneware in slow cooker heating base, and add onion mixture, chicken, potatoes, chicken broth, coconut milk, salt and pepper, and curry powder. Cover, and cook on Low for 6 hours or High for 2-3 hours.
During the last thirty minutes of cooking time, add the peas.
Garnish with cilantro or basil.

Mexican Crock-Pot Chili

Ingredients:

2 (15 1/2 oz.) cans red kidney beans, drained
1 (28 oz.) can tomatoes, cut up
1/2 cup chopped celery
1 cup chopped onion
1 (6 oz.) can tomato paste
1/2 cup chopped green pepper
1 (4 oz.) can green chili peppers, drained and chopped
2 tablespoons sugar
1 bay leaf
1/2 teaspoon garlic powder
1 teaspoon salt
1 teaspoon dried, crushed leaf marjoram
1/8 teaspoon pepper
1 to 1 1/2 pounds lean ground beef

Preparation:
In skillet brown ground beef and drain. In crockery cooker combine all ingredients. Cover, cook on low heat for 8 to 10 hours. Remove bay leaf and stir before serving. Serve with cornbread. Makes about 6 to 8 hearty servings.

Stuffed Green Peppers

Ingredients:
6 – 8 small green peppers, tops removed and seeded
1 10-oz. package frozen corn, partially thawed
1 lb ground beef, browned and drained
1 8-oz. can tomato sauce
1 cup shredded cheddar cheese
1 clove garlic, minced
1/2 cup onion, chopped
1/2 tsp Worcestersire sauce
1/2 tsp salt
1/2 tsp pepper
2 tsp ketchup

Directions:
Wash peppers and drain well. Combine all remaining ingredients except ketchup in mixing bowl. Stir well. Stuff peppers 2/3 full. Pour 3 tablespoons of water into the stoneware. Arrange stuffed peppers in stoneware. Pour ketchup over top of peppers. Cover cook on Low 7 to 9 hours or on High 3 to 5 hours.

This week I received this very special handmade wooden doll by Keet Leibowitz who owns a store on Etsy. I have coveted these dolls for awhile and now am the proud owner of one. I imagine I’ll be adding “friends” for her in the very near future. I plan on letting my daughter play with them when she outgrows the “put everything in the mouth” phase. They are sweet. Thanks Keet!

If you don’t know what Etsy is, be forewarned… it can be addictive. Most of the things on there are handmade works of art.

Welcome to my new blog. After moving to Virginia and having several colleagues hound me about getting a blog, I’ve finally caved. Here we are! I’ve always been afraid I wouldn’t have something witty or inspirational to say, so I guess I’ll just say whatever is on my mind on any given day.

It’s hard to believe we’ve been here 4 months already. The humidity was a bit of a bear in the beginning and when the weather started to drop in temperature, I realized very quickly that I wasn’t going to get by on my flip-flops and t-shirts anymore. Hellooooo wake up call! It’s taken Mike (my husband) a bit of getting used to as well. Last week he turned his windshield fluid on to clean his windshield, only to have it turn into a sheet of ice on him. The next day I went to use the wipers (mentally trying not to do what Mike had done the day before), and what do you know? I hit the windshield fluid by accident. While driving. Oops. Yeah, that was a little nerve-wracking. It’s so mortifying to be so naive about such things. We have 3 years to get our act together. My kids are geeked out by the grass turning to ice. So much so that we’ve caught them jumping up and down on the frozen tundra. “Psssssst… you’re making it painfully obvious that we’re from California. Cut it out!” I’m excited that all the museums in D.C. are free. FREE!!! I like free. Especially when I’m trying to find things to keep my 4 kids entertained. This will be the first Christmas where we won’t be basking in 75-85 degree Southern California weather. At first I was bummed out about it. But if it snows, that would make my kids pretty darn happy. And that’s gift enough for me.

Marisol/ImgSensors - So nice you got yourself a blog, Ingrid! Congratulations, it looks fantastic!

I had have just learned about the existence of Prophoto a few days ago so it’s such a nice coincidence to see you using it. I have a own customized WordPress blog but this looks so much greater. May I ask you if you find this Prophoto easy (and fast) in use?

I’ve been a little bit quiet on Flickr lately but in case you are wondering who I am there I’m ImgSensors there too.

Ingrid - It was very easy to use, but I also have a background as a web designer and programmer, so it was easy for me to jump in the backend to figure things out. =)
